Mini M&M Brownie Bites

I was on my way to the grocery store the other day and got a craving for M&M brownies. Not sure where that came from but I had to have them. I picked up some M&Ms baking bits and a few hours later I had a batch of very delicious M&M brownies. They were so good, they didn’t last long enough for me to take pictures of them.

Given that I had to make this recipe again and actually photograph it this time, I decided to buy a silicone brownie square baking mould so that I’d get perfect bite sized pieces. This didn’t work out quite like I’d wanted. The brownie bites formed this weird glassy exterior from the silicone. They were also too small and too crunchy. So I reverted back to the good old way of making brownies, in a square pan. I think the mould might be good for something like Jello shots or ice cubes, but not so good for brownies.

Anyways, back to the brownies! I really love this recipe. The M&Ms on top give it a little bit of extra crunch and a hint of the M&M chocolate flavour. I shared the brownies with some friends and coworkers and they all love it too. Here’s the recipe:

M&M Brownies

16 squares

  • 85g semi sweet chocolate
  • 125g butter
  • 210g dark brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 75g all-purpose flour
  • 20g cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 55g M&Ms Baking Bits

Preheat oven to 350°. In a small bowl, sift together flour, cocoa powder, baking powder, baking soda and salt. Set aside.

Melt the chocolate and butter in a double boiler. Transfer to mixing bowl and mix in brown sugar. Add eggs and beat until just mixed. Add vanilla and sift in flour mixture.

Line an 9″ square baking pan with parchment paper and pour in the entire bowl. Bake until a toothpick comes out with moist crumbs sticking to it, about 30 minutes.
