I wanted to make sugar cookies and decorate them with elaborate icing designs, but these cookies don’t need icing to taste great. I can’t get my boyfriend to stop eating them. Plus I got lazy and ran out of free time. These little ones remind me of animal crackers from my younger days.

Here’s the recipe:

Easter Sugar Cookies


Lots ‘O Cookies, approximately 20 large cookies or a billion wee ones.

  • 420g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 250g unsalted butter, softened
  • 220g granulated sugar
  • 1 egg
  • 1 tsp vanilla

Sift the flour, baking powder, baking soda and salt. Set aside. Beat the butter and granulated sugar in an electric mixer on low-medium speed until well combined. Add the egg and vanilla and beat until just mixed. Add the flour mixture and beat until just mixed. Refrigerate for 30 minutes.

Preheat oven to 350°. Line two baking sheets with parchment paper. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes using cookie cutters. Place cookies 1 inch apart on baking sheets. Bake for 8-10 minutes. Remove from oven and transfer to a cooling rack.

To make the little bite sized cookies, I used the Wilton Easter 6 pc Mini Metal Cookie Cutter Set.

    Went to pinterest and saw Peppermint Mocha Cookie Crisps but you don’t have it listed at your website. What gives? It has a website posted as sugarysweets.com
